'Grandaddy' of jerky: traditional Indigenous dry meat hits the global market
Ian Gladue, the Edmonton-based founder of Pȃnsȃwȃn, has successfully expanded his traditional Indigenous dry meat business to hundreds of Canadian stores, including Safeway and Sobey's locations. Pȃnsȃwȃn is made with bison meat and smoke, using traditional Cree techniques. The Canadian Food Inspection Agency approved Pȃnsȃwȃn for global sales in December, despite food scientists' initial concerns about its shelf stability without additives. Gladue is now working on expanding his product line with pemmican and smoked fish.
